So since I have changed my diet to low fat whole food plant-based, I had to come up with a recipe for a mayonnaise that was oil free but still absolutely delicious! This oil-free vegan mayonnaise tastes wonderful in potato salad, in chickpea salad sandwiches, on top of veggie burgers, and more!
This version of vegan mayonnaise is made with Tofu, which makes it super creamy, packed with protein and also still pretty neutral-tasting like regular mayo is and lower in fat compare to traditional mayonnaise. The best part about this vegan mayo is how easy it is to make. Simply throw all of the ingredients in the blender and whirl it up until it’s creamy.

- 1 tsp apple cider vinegar
- 1 tsp Lemon juice
- 2½ tsp dijon mustard
- ¼ tsp maple syrup
- Pinch of sea salt
- Pinch of turmeric
- Pinch of curry poweder (optional)
- 140g (5 oz) tofu
- Place all the ingredients into blender and blend until smooth.
