Rice with Dill and Fava Beans

Rice with dill and fava beans is a traditional Persian dish and it happened to be an absolute favorite of mine. This recipe is very easy to make and surely add a nice kick to basic white rice that everyone will enjoy.

  • 1 cup white basmati rice
  • 1 cup fresh dill, finely chopped
  • 1 cup frozen fava beans
  • 2 tablespoons olive oil
  • Half teaspoons garlic powder
  • ¼ teaspoon turmeric powder
  • Salt and freshly ground black pepper to taste
  1. Put the rice and the rest of the ingredients in a medium pot with a lid, pour over 2 cups of water and bring to boil. Let the rice boil until the water is evaporated stirring the rice occasionally with a wooden spoon to make sure it doesn’t stick to the bottom of the pan. Make sure you season well with salt and pepper.
  2. Once all the water is evaporated. Wrap the lid in a kitchen towel and cover the pot so the steam can not scape. Lower the heat to low and let the rice to steam for half an hour. Remove from the heat and take the lid off.
  3. Fluff the rice with a fork and serve warm.
